Tiramisu

Ingredients ( for one tiramisu )

  1. 1 1/2 cups Espresso ( hot water mixed with coffee powder )

  2. 4 egg yolks

  3. 1/2 cup sugar

  4. 14 ounces Mascarpone cheese

  5. 1 teaspoon Vanilla extract

  6. 1 cup Heavy cream

  7. Lady fingers (12-15)

  8. Cocoa powder ( optional )







Procedure


Prepare Espresso and put aside to cool.


In a large bowl, put 4 egg yolks and and sugar. Now place the bowl on top of a pan with simmering water on medium heat. Mix/handmix the egg and sugar mixture until it becomes light yellow ( don't overcook ). Set aside and let the mixture cool.


Put the egg mixture in a bowl when cooled and add mascarpone cheese and vanilla extract. Mix this until smooth.


Next, in another bowl, add the heavy cream and beat with hand mixer until it reaches stiff peaks which also means you can take that bowl and flip it above your head and nothing will fall out :-) Add this mixture to the mascarpone mixture.


Dip each ladyfinger into the coffee mixture for 2 seconds and place it on the bottom of a rectangular pan. Make sure to the cover the whole bottom. Start spreading the cream mixture above that and cover the whole pan. Do this entire process once again in the same pan as another layer.


Cover the pan with a shrink wrap and let it rest in the fridge for at least 6 hours. Once out, take out the shrink wrap and dust cocoa powder on top.
