Ingredients
Flour- 1.5 cups
Salt- 0.5 tsp
Cocoa powder- 3 tbsp
Baking powder- 1.5 tsp
Baking Soda- 1 tsp
Sugar- 1 cup
Vegetable Oil- 0.5 cups
Eggs- 2
Substitute for Egg- 0.5 cups of curd
Vanilla extract- 2 tsp
Buttermilk- 0.5 cups
Red food colouring
Vinegar- 0.5 tsp
Hot coffee- 0.5 cups
Frosting ingredients (optional)- 1 cup sugar, 0.5 cups of butter, and 1tsp vanilla extract
Procedure
In a medium-sized bowl, sift in the flour, salt, cocoa powder, baking powder and baking soda. Mix it gently, and set it aside.
In a large bowl, add in the sugar (it can be white sugar, brown sugar, or even jaggery) and the oil. Mix it for 2 minutes. Next, add in the eggs or curd, along with the vanilla extract, and continue to mix until combined. Then, add in the buttermilk and the red food colouring until evenly mixed. If you don't have buttermilk, mix in regular milk along with 1tsp of vinegar in a separate cup before baking, and let it sit for about 20 minutes before it's used. After these ingredients are fully combined, add in the extra vinegar, as well as the hot coffee, and stir.
Then, add in the dry ingredients to this bowl, little by little, mixing in between each interval. Gently combine the batter, and only mix it until all the dry ingredients have dissappered.
Line your baking tin with parchment paper, or with some butter and flour, and pour all of the batter in. Shake the tin so all the batter is uniform, and tap the tray on the counter 10-15 times to prevent air bubbles. Place your cake into a pre-heated oven, and bake it for around 35-40 minutes at 175 degrees.
In this time, you can make an optional buttercream frosting. Combine the butter, sugar, and vanilla into a bowl or a stand mixer. Mix these ingredients for at least 5-10 minutes, until it has become extremely light and fluffy. Place this frosting into a piping bag.
After taking your cake out of the oven, let it cool for at least 20 minutes.
Then pipe your frosting in any way you desire.
Lastly, cut it into even slices and enjoy!
