Fudgy chocolate brownies

Ingredients ( for 15 pcs )
Butter - 1/2 cup
Sugar - 1/4
Brown sugar - 1/2 cup
Eggs - 3 (for vegetarian, replace with 1/2 cup curd)
Vanilla extract - 2 tsp
Coffee powder- 1 tsp ( optional )
Flour - 1 1/2 cups
Cocoa powder - 2 tbsp
Baking powder - 1 tsp
Baking soda- 1 tsp
Dark chocolate- 150g
Procedure
Heat up water on a saucepan on medium heat until it starts boiling. Put a bowl on top of that with the dark chocolate ( cut into pieces ) and the butter. Keep stirring until all the chocolate has melted and it looks like chocolate syrup. Take it off the heat and allow it too cool.
In a large bowl, add in both the sugars, coffee powder, vanilla essence and your eggs or curd. Mix this for about 10 min ( if you don't mix it properly, your brownie won't rise in the oven and it will be dense and very oily ). Then, while you're mixing, add the chocolate butter mix and stir just until combined ( remember to not overmix ).
After that, sift in your flour, cocoa powder, baking powder and baking soda. Fold in the dry ingredients into the wet, and again, remember to not overmix.
Pour your batter into a greased loaf pan, remember to evenly distribute the batter and tap the pan to the counter about 10 times to avoid air bubbles. Preheat the oven to 180 C for 10 min, then put the brownie in and let it bake for about 30 min.
Take it out and let it cool for a minimum of 20 min ( if you don't, the brownie will break and be stuck to the pan ). After cooling, cut it into equal pieces and...ENJOY!!
