Delicious Lemon loaf with lemon icing

Ingredients ( for 15 pcs )
Butter - 1/2 cup, softened
Sugar - 3/4 cup
Eggs - 3 (for vegetarian, replace with 1/2 cup curd)
Vanilla extract - 2 tsp
Flour - 2 cups
Baking powder - 2 tsp
Baking soda- 1 tsp
Buttermilk- 1/2 cup ( there is a recipe on how to make butter milk incase you don't have it in the procedure section).
Lemon juice - 1/4 cup
Lemon zest - 2 full lemons

Procedure
Buttermilk recipe- Take 1/2 cup of milk and squeeze in 1/2 of a lemon and 1 tsp of vinegar into it and mix until combined. Put into fridge until needed.
Next, in a large bowl, mix together the butter and sugar for 5 min, or until light and fluffy. Then, mix in the eggs/curd and vanilla essence until combined.
Then, in another bowl, sift in the flour, baking powder and baking soda and mix until well combined.
After that, start alternating the dry ingredients and milk. That means, add 1/3 of the dry mixture and mix until combined, then add 1/2 the milk and mix until combined, keep doing that until there is no more left.
Now, to make a lemon loaf, we need lemons! So, add the lemon juice, lemon zest and mix them until combined.
Pour this batter into a greased loaf pan lined with parchment paper. Remember to evenly distribute the batter all around the pan, and tap it on the counter multiple times to avoid air bubbles.
Pre heat the oven to 180 C for 10 min, and the put the cake in for about 40-45 min. Take the cake out after its done, and let it cool for about 15-20 min ( don't directly take it out, not only will it be really hot, some of the cake will still be on the panned the icing will melt all over it).
Icing- Just mix together the sugar and lemon juice until combined. Add some water if necessary. Put in the fridge until ready to use.
After that, take the icing out of the fridge and spoon it on to the cake and let it drip down the sides.

Then cut the cake into how many ever pieces you want, and then...IT'S READY! ENJOY!
