Red Velvet Cookies

Ingredients (for 25 pcs)
Butter - 100g (cold)
Sugar - 1/2 cup
Brown sugar - 1/2 cup
White chocolate - 1/2 cup ( optional )
Eggs - 1 (for vegetarian, replace with 1/2 cup curd)
Vanilla extract - 1 tsp
Red velvet color - 1 tsp
Flour - 2 cups
Cocoa powder - 3 tsp
Baking powder - 2tsp
Procedure
In a large bowl, mix together the cold butter and both the sugars for 2-3 minutes, or until light and fluffy. Next, add in the white chocolate and fold the batter so the chocolate doesn't break. After you've folded it in, add one egg, or 1/2 cup of curd for a vegetarian recipe and mix until combined. Then, add 1tsp of vanilla essence and red food coloring to make it red velvet cupcakes!
In another bowl, sift your flour, cocoa powder and baking powder ( cocoa powder can get clumpy, so its better to sift it ). Then whisk until combined.
Then, gradually start adding the dry mixture into the butter mixture, mixing in between each addition. Remember to not overmix or else your dough will get too tough.
Start scooping your dough with a spoon onto a baking tray lined with parchment paper ( if you don't have parchment paper, just grease with butter and dust some flour ). Make sure your dough is not too close to each other because they will spread in the oven.
Put your dough in the fridge for anywhere between 30 minutes- or even 2 days! Then put your cookies into the oven which should be preheated for 10 min at 180 C. Bake your cookies for 12-14 min or until the cookies start to crack on top.
Take your cookies out in the oven, and let it cool for at least 10 min. ( if you pull it out right away, some parts of the cookie will still be stuck on the pan ). Then the last step, and possibly the most exciting one, get a glass of milk and enjoy!
