Ingredients ( for 20 pcs )
Butter - 1/2 cup, softened
Brown sugar - 3/4 cup
Eggs - 2 (for vegetarian, replace with 1/2 cup curd)
Vanilla extract - 2 tsp
Flour - 2 cups
Baking powder - 2 tsp
Baking soda- 1 tsp
Cinnamon- 1tsp
Milk- 1/2 cup
Ripe bananas- 3
Walnuts- 1 cup crushed
Procedure
In a large bowl, mix together the butter and sugar for 5 min, or until light and fluffy. Then, mix in the eggs/curd and vanilla essence until combined.
In another bowl, break up your bananas with a fork until liquid but with small specks of banana. Add this to your butter mixture and lightly mix so the bananas don't break up even more.
Then, in another bowl, sift in the flour, baking powder and baking soda and cinnamon and mix until well combined.
After that, start alternating the dry ingredients and milk. That means, add a 1/3 of the dry mixture and mix until combined, then add 1/2 the milk and mix until combined, keep doing that until there is no more left.
Then, crush up your walnuts ( if you want small bites of walnuts, don't crush it up completely ). Add this to your batter and lightly mix.
Pour this batter into a greased loaf pan lined with parchment paper. Remember to evenly distribute the batter all around the pan, and tap it on the counter multiple times to avoid air bubbles.
Pre heat the oven to 180 C for 10 min, and the put the cake in for about 35-40 min. You know when the cake is done when you stick a toothpick in, and no batter comes on it. Take the cake out after its done, and let it cool for about 15-20 min ( don't directly take it out, not only will it be really hot, some of the cake will still be on the pan).
Then cut the cake into how many ever pieces you want, and then...IT'S READY! ENJOY!
